Blueberry Banana Acai Smoothie Bowl

Smoothie bowls are one of the biggest crazes in the health food world right now. Whether you have been out to Cali and cooled off with an acai bowl, scrolled past a cafe in Bali posting their favorite pitaya smoothie bowl recipe on Insta, or maybe you have even stopped by Laney & Lu for a superfood smoothie bowl, I know chances are pretty good that they have caught your eye at some point. I mean, how could they not, they are B E A U T I F U Lā€¦ delicious, and packed with all things good. But do you know how to make one? If not, you will now! They are super easy to make. You essentially make any smoothie of your choice, but cut the liquid in half to make it really thick so you can eat it with a spoon. Pour it over granola or fruit, and top it with anything you can think of. From berries to bee pollen, your bowl is your oyster!

I LOVE smoothie bowls because I can jam pack it with nutrient dense foods that will keep me satiated for hours. While I am also a drinkable smoothie lover, the act of putting that chilled spoon in my mouth and crunching on some fresh fruit makes me feel like I am getting in a whole meal, not just a snack. 

Blueberry Banana Acai Smoothie Bowl

Yields 1 smoothie bowl


  • 1/2 cup unsweetened coconut milk (or nut milk of choice!)
  • 1 pack frozen acai 
  • 1/2 frozen banana 
  • 1 cup frozen blueberries


  • 1/2 fresh banana
  • 1 kiwi
  • Small handful of fresh blueberries
  • 2 Tbl goji berries
  • 1 tsp raw cacao nibs
  • 1 tsp unsweetened shredded coconut
  • 1 tsp bee pollen

In a Vitamix or other high powered blender, blend coconut milk, acai, frozen banana, and frozen blueberries until smooth. Start on low, and increase speed. Once it appears to be smooth, open lid and check for any frozen chunks. Continue blending if necessary until smooth. Line bottom of bowl with fresh banana slices. Pour blended smoothie over bananas and spread evenly with spoon. Top with toppings. Dig in & enjoy!
