Ginger Coconut & Date Energy Bites

Are you on the energy bite bandwagon?  It's okay if you are skeptical, but before you say "no thanks," give these a try!  These easy-peasy protein packed bites can satisfy your taste buds and be a great source of nutrients.

Need a pre or post workout snack? Have a hangry kiddo? Going on a road trip or weekend hike? These are a great go-to. These no-bake bites are gluten free, paleo, and vegan to meet whatever your dietary needs may be.  

PS. They still taste just as good after getting smushed in your pack while you were bagging a high peak.  
 

Ginger Coconut & Date Energy Bites

Yields 20-30 bites Total time: 15 minutes

INGREDIENTS:

  • 1 cup pitted dates 
  • 1/2 cup almonds
  • 1/2 cup unsweetened shredded coconut
  • 1/2 tbsp fresh ginger, grated (If you don't have fresh can use 2 tsp if ground ginger)
  • pinch of sea salt 
  • 2 tsp water
  • extra coconut for rolling (optional)

DIRECTIONS:

  1. In the bowl of a food processor place dates, almonds and shredded coconut and pulse until a thick and finely chopped.
  2. Add in ginger, pinch of sea salt and 2 teaspoon of water and continue to pulse until a slightly sticky mixture forms.
  3. Scoop out a tablespoon of mixture and roll into a ball (wet your hands with water if mixture is sticky and difficult to roll).  
  4. Roll the ball in shredded coconut and repeat with remaining mixture.
  5. These store well in a glass container refrigerator or freezer. I love putting mine in the freezer and taking out a few before I head off for the day!
